Butterscotch Pudding

This is an excellent dessert for the winter and if you want to whip up something delicious in a short time. Best served warm with Ice Cream or Custard. This pudding makes it's own, delicious sauce.




What you need:


  • 1/4 Cup brown Sugar (dark brown sugar works best but brown sugar is also fine)

  • 1 1/4 Cup All Purpose Flour

  • 2.5 tsp Baking Powder

  • 100 g Margarine or unsalted butter

  • 1 egg

  • 1/2 cup milk

  • 4 Tbsp Golden Syrup

For the sauce:


  • 3/4 Cup brown sugar (dark brown sugar works best but brown sugar is fine)

  • 2 Tbsp Cornflour

  • 2 Cups Boiling Water

Method:


  • Whisk Sugar and corn flour together and set aside.

  • For the batter, add all batter ingredients together and mix well until there are no lumps.

  • Prepare your Swift Baker Ring Pan with Non-Stick Spray.

  • Add the batter in the Ring Pan

  • Sprinkle the sugar/corn flour mix over the batter

  • Pour the boiling water over the surface as close to the batter as you can. Do this slowly, use the back of a spoon if needed. This will ensure that you don't break the surface of the batter.

  • Place the Swift Baker base on your gas stove, add the Ring Pan and cover with the dome.

  • Bake on medium heat for approximately 25 minutes or until a knife comes out clean.
