Banana Loaf

Soft, moist and rich in flavour. We often have bananas that go too ripe in our house and this recipe is so easy to make and fast in the Swift Baker. The riper the bananas, the better the results will be. Ideal for lunch boxes or to enjoy with afternoon tea or coffee.



What you need:


  • 1/2 cup (125ml) butter or margarine

  • 1 cup (250ml) sugar

  • 5ml Vanilla Essence

  • 2 Large eggs

  • 2 cups (500ml) All-purpose flour

  • 2 tsp (10ml) Baking Powder

  • 1/2 tsp salt

  • 4 to 6 ripe bananas


Method:


  • Cream the butter and sugar and add the vanilla essence

  • Add the eggs and mix well.

  • Add the flour, baking powder and salt and mix well.

  • Mash the bananas with a fork and add to the mixture. Mix well.

  • Prepare your Swift Baker Ring Pan with Non-stick cooking spray.

  • Add the batter in the Ring Pan and place pan on the Swift Baker Base. Cover with dome.

  • Bake on medium heat setting for approximately 30 to 35 minutes or until a knife comes out clean.
