Apricot Roly Poly

The perfect dessert for colder days. This is probably one of the easiest baked desserts that we make. This recipe is not dry at all and bakes for about 25 minutes in the Swift Baker. Best enjoyed warm with custard or ice cream.

What you need for the dough:

500 ml (2 Cups) Cake Flour

10 ml (2t) Baking Powder

5 ml (1t) Ground Cinnamon

1/4 t Salt

1/3 Cup cold butter or margarine

1 Large Egg

125 ml (1/2 Cup) Milk

125 ml (1/2 Cup) Apricot Jam

For the syrup:

1/3 Cup (85ml) butter or margarine

1/2 Cup (125 ml) Sugar

1/2 Cup (125 ml) Apricot Jam

1 Cup (250 ml)Water

10 ml (2t) Vanilla Essence


- Sift the dry ingredients together

- Rub in the cold butter or margarine

- In another bowl, beat the egg and milk together and add to the dry ingredients.

- Mix to form a soft dough (should be able to form into a ball). If you need additional milk,

add a little bit just to ensure that you can manage the dough well.

- Sprinkle a flat surface with a bit of flour and roll out the dough into a rectangle

approximately 0.5 cm thick.

- Spread the 1/2 Cup of Apricot Jam evenly on the dough.

- Roll the dough up lengthways and cut into 5 cm thick slices.

- Prepare your Swift Baker Ring Pan with Non-Stick Spray and place the slices in the

Ring Pan. Leave enough space in-between them.

For the Syrup:

- In a small saucepan, mix all the ingredients for the syrup together.

- Heat the sauce until all the butter and sugar has melted.

- Pour the hot sauce over the Roly Poly slices in the Swift Baker Ring Pan.

- Place the Swift Baker base on your gas cooker, add the Ring Pan and cover the the dome.

- Bake for approximately 25 minutes.

Serves 4 - 6 people.
