Apricot Jam Chicken

This is a family favourite and oh-so easy to make. Juicy and tender chicken. The sauce is delicious with rice or you can let the chicken cool down and make a tasty salad with it.

What you need:

6 to 8 chicken pieces (I prefer chicken fillets but drumsticks and thighs will also work)

Chicken spice (your choice but can just be some salt and black pepper as well)

1 Cup Apricot Jam

1 Cup Mayonaise

1 Packet Thick White Onion Soup

1/4 Cup water


  1. Prepare your Swift Baker ring pan with the non-stick spray

  2. Place the chicken pieces in the ring pan

  3. Mix the apricot jam and mayonnaise together

  4. Pour the jam and mayonnaise mixture over the chicken and make sure that all the pieces are covered.

  5. Pour the soup powder over the chicken (yes, over the sauce-covered chicken)

  6. Add the water

  7. Close with the dome and turn your gas to the medium heat setting.

  8. Bake for approximately 35 to 45 minutes.

  9. If you prefer a thicker sauce, open the dome for the last 5 minutes and turn your gas setting to high.
